  3. Season the Catfish

  6. Heat a cast-iron skillet over high heat until very hot.
  7. Cook the Fish
  8. Place catfish in the skillet and cook for 3–4 minutes per side, until a dark crust forms and the fish flakes easily with a fork.
  9. Serve
  10. Remove from heat and serve immediately with lemon wedges and parsley if desired.
